Watergate Salad

Perhaps one of the most popular fares of pistachios is Watergate Salad. An unknown person during the scandal of the same name, is said to have given this dessert it's name. Some say, the Kraft Corporation titled it but this hasn‘t been proven. The best known theory is that a reporter gave it the name, and it stuck.

Watergate Salad

2 instant pistachio puddings
1 can crushed pineapple
1 1/2 cups mini marshmallows
2 containers whipped topping


Put pudding mix and crushed pineapple in medium sized mixing bowl. Mix well. Add marshmallows and whipped topping. Mix well again. Cover and place in refrigerator. It takes approximately 2-3 hours to completely chill. Serves up to 10 people as a dessert or side dish.

Some other options are adding coconut or maraschino cherries or adding oranges instead of pineapple.

This recipe can easily be turned into a low sugar one by using sugar free pudding and sugar free whipped topping. I have also discovered sugarfree marshmallows online here. They may be found at your local health food store also.

Micah,

Could you help me out? I'd like to start eating healthy but I absolutely abhor veggies. Do you know how a veggie hater could acclimate herself to start eating vegetables?

PS: I do eat carrots, lettuce, cabbage, and cauliflower.But that's about the extent of my veggie consumption.

What about dipping them? You could use your favorite dip (Ranch dressing or another kind?)

Hiding them helps too. Eating them in small pieces, like in soups is a way to get them in your diet too.

You can get the nutrients without the taste so to speak by doing it that way.

Some people add them into mashed potatoes too.

Thanks for the encouraging words -any nod of improvement in this cyber world is a God-send! I love Your site..LOVE IT!!!

Anything that has to do with food and I am there. I am inclined to comfort food....I am from the south so what we don't deep fry is served with a side of gravy... but I have to admit you end up with a plate full of love!
We try not to cook like this any longer ...my area has become heart attack city...yet every once in a blue moon we serve it up with style the old fashioned way.... Good Times!
Anyways, thanks again for the love that you sent over my way and if you have any ideas for the single mom please share... we are a people that have not yet had a voice and I want to change that.... if you know of anything thind that we need to work on (seeing as you are a "seasoned" veteran) just drop us a line!

I love the gravy and southern style cooking too, but as you said...heart attack city!
